Brooklyn Distillery Packs DIY Distillation Equipment

The Industry City Distillery in Brooklyn, NY, distills its own sugar beet vodka using equipment they built in-house, with the help of The City Foundry, a “research and design group focused on improving small-scale manufacturing processes through the blending of science and art.” [thanks, Rich]

First half of that film is pretty interesting. Glass columns, fluidized beds, pro-pak packing.

Plug flow fermenters instead of batch fermenters. I've been reading about these. The yeast is fixed on a substrate in the flow path. It's supposed to accelerate fermentation time by an order of magnitude.

Note that Schnell - a longstanding and respected supporter of science and logic in fermenting and distilling practice - is now sadly no longer with us.
We never got the hoped-for feedback from his Chemistry Lecturer. But do read the thread... the ideology survices!

I intend to explore the immobilsed yeast field myself, but that won't start for at least 4-6 months due to my existing schedule.

Anyone keen in joining in a research group to do this from a united approach, please PM me. Should avoid double-counting of the workload involved. The request applies specifically to those willing to do everything on an AD "open source" basis - whatever we learn we share, gratis, with the entire AD Membership.

I've worked with ion exchange deionization for ultra-pure boiler makeup and condensate polishing for many years. I've been noodling with fixed yeast fermentation ideas for almost as long.

I am visiting New York and staying in Manhattan, would like to tour this distillery and tried to watch thE video on my IPAD but am unable to get it to run.

Edit: I got it to run by touching the time not the start.

Equipment type: I have a VM still with a 2" column and a keg for a boiler and a 4" CM still that runs on electric heat.

I went to their website and was intreged enough to call them since I am visiting NY but only a got a message machine. Was hoping to visit and talk but thus far they have not called me back. :(
