Barrel Air permeation rate?

Natural materials such as cotton and natural rawhide fit here. But it could be dough or water too.

Barrel Air permeation rate?

Postby Cap'n Canuck » Fri May 02, 2014 6:25 pm

Does anyone have, or have you seen a spec for the gas (air) permeation co-efficient for a generic whiskey barrel? I was digging around a while back, and found a few references, but nothing I would call authoritative.

Any help or pointing you can give me would be appreciated.

Thanks, eh?

You mean the D from Fick's law? It isn't going to be easy to solve once you have the Ds as wood is not only heterogeneous but also very anisotrophic. In addition, there will be different Ds for both the ethanol and water, which the concentration of will affect the effective D's for Nitrogen and Oxygen. Your boundary conditions for the inside might be tricky too. I would take a stab and say that the O2 influence on spirit in a barrel is not diffusion limited, but I'm not at all sure about that.

It's certainly less than thermal diffusion, owing to the vacuum that forms when my barrels cool down.

Nadalie USA has some good information on their website. Maybe you can find something there.
