What a find! I would have to have a wee taste, but I would pour only a small dram and allow it to open. I would seal the bottle before I tasted to dampen temptation to have a second and a third taste...

It's all packed up now, but i may dilute a 375ml bottle in the next couple weeks when i get to my new warehouse. We'll see.

You might be surprised how good it is. I know it’s not supposed to age/improve in glass but I actually believe it does in some cases.

We found a bottle of one of my earliest batches of UJSM in the back my buddy’s liquor cabinet and it really was excellent (for as long as it lasted).

My real surprise was finding a small bottle of my white dog, labeled 120 proof, that had been in the back of the cabinet at the cabin for years. It had a taste more like a very old white tequila, and everybody loved it, even at the high proof.

Uncle Huey pulled out a dust covered half gallon from under the sink at his cabin labeled “moonshine-do not drink”. He said the guy who made it had been dead probably 30 years. Everyone was afraid to drink it, so I pulled it out every time I dropped by (until it was gone)....it was a very good corn white whiskey. Whoever the old distiller was, he knew what he was doing.

I’ve set a couple of labeled bottles way back under the bar just to forget for a while..

I'm positive it would keep improving as it has oak in the bottle. The thing i'm worried about is my cuts back then.

Slightly off topic, but I have a handful of bottles of my first mead from what? 10 years ago. It's great. It'll be gone soon, though.

You made me think a bit so I went searching, come up with a some UJSM and Rum from 2009, 1/2 a bottle of DWWG in the white labelled 2007 plus a bottle of white UJSM from the same time. Hmmmmmm.

Equipment type: 50 litre keg, SD 2" to 4" torpedo with 2 bubble plates, Dephlegmator, Pot still arm, copper SPP and condenser.(Tracker Stacker Flavour Packer)
Various pot still/thumper configurations.
Bok 2" slant plate for neutral and cleaning up mistakes.
