Banana Brandy

Merry Christmas to all and a very Happy New Year to come! Does anyone have any experience with distilling banana wine into brandy? I have around 5 gallons of banana wine which I am contemplating distilling but would like to know if anyone has had success with this.

PG,

Are you planning on crippling your refluxer to get potstill flavor, or reflux it to strip all the flavor out of it? That decision will make all the difference.

Read old info on HD once, i seem to recall, about bannana being one of the worst distillates tastewise.

Something about esters i think, can't recall.

Banana flavor comes from amyl acetate which is already in most washes because its produced by the yeast. It comes out in the heads, so if you want to keep that fruity banana flavor just keep the heads.

:roflmao: doesn't work very well with ripe bananas, green is better for this endeavor. :roflmao:

Amyl acetate has a boiling point of 149 °C, and Isoamyl acetate is 142 °C. How can that come out in the heads?

The low solubility i water might explain it.

Not really questioning that it does come out in the heads, just want to know how.

Wonder if brandy have a friend named sherry. :D
