Punkin's Muck

This is a Baileys chocolate cream knockoff that's easy to make and popular with the guys and gals.

I've had such a good response that i took the liberty of posting it in here (plus i've been making it for nearly thirty xmas's)

Baileys.
Whip 3 farm eggs till fluffy.
Keep beating with the mixer as you add...
Add 2 cups DWWWG , UJSM, bourbon(or other 40%)
1 can sweetened condensed milk,
about the same of thick cream
1 tablespoon of chocolate topping
1 teaspoon of good vannilla extract (vannilla bean paste is a standout).

Shake before pouring over ice...

We only usually make it at xmas time, because it's just too good, we'd be fat as fools if we drank it all year.



Got a top improvement worked out today, 4 parts of Muck to one part kahlua :wink:

This is ridiculously good stuff. The only thing I have around in quantity is brandy so I used it for a base. The missus had one too many and even an ugly guy can get lucky in those circumstances, so thank you, I owe you one.

Candy is dandy but liquor is quicker.

Haa, Zaa deleted my post. Recipe was very similar. This is tasty stuff! I was given this recipe by my mom that has been making it for many xmas' as well.

Never changed it much in all these years except to move to finer ingredients. :8)

A nice variation on this recipe - rum cream

substitute the whiskey for single run potstilled rum
eliminate the chocolate

I add the spirit at the very end and slow the mixer to minimum before adding the cream.
last time I attempted muck I ran it too fast and ended up with sweet whiskey flavored butter.

Do any of you gentleman have a recipe for something like the great one here that doesn't use eggs? I have company coming and an egg allergy is on the menu. There are a few around the net, but experience means lot over trial and error.

Hi Ugly, I make a Coconut Cream Rum that I drink with Orange juice that could make a suitable base for you.

1. Can of Coconut Cream about 400ml
2. Can of sweetened Condensed Milk about 200 ml
3. 1 teaspoon Vanilla Essence
4. Perhaps 1 teaspoon of Coconut Essence (flavours?)
5. Coconut Rum or good neutral silver rum, vodka etc.

The principle is to blend the Coconut Cream and Condensed Milk this can be a simple as pouring them into a 1 litre bottle adding the essences and topping up with the "rum" then shaking it. Variations are beating the mixture to a thicker texture and tweaking the essences to enhance your required flavour. I keep this chilled in the fridge and just add good quality orange juice to a say a 1/3 of glass of mix and sprinkle a little nutmeg or cinnamon on top - the end result of this looks remarkably like a yellow and white egg nog which may give your guests bad vibes so perhaps you could experiment with different flavours and juices - the point is the binding of the coconut cream and condensed milk to create a white creamy base to emulsify with the alcohol.

Thanks Mike, it sounds very interesting and quite different than what I have encountered before, I will give it whirl. I don't think the colour is important, I could always add a dash of choc syrup or something if it were.
