White Rum avec Maple

The wash was started this a.m. consisted of
20KG of white cane sugar
10KG of Fancy grade molasses
5KG of amber pure maple syrup

this will likely ferment out by Saturday.
final gravity is likely a bit under 10%


The still plan is to strip down to 20% or so. The spirit run will be diluted to 30% and 2 liters of pure maple syrup will be added to the still charge. I'll be taking this up to 94% or better.

After running out of neutral this past winter I acquired a taste for white rum :mg:

I like the sound of putting some maple back into the spirit run. Have you done this before?

I assume adding some molasses into the final run of a rum would do the same?

Minime, you must have more money than god, that or a real cheap source of maple syrup. Just that syrup would be somewhere between 100-200$ for me. Hope it works out good for you......

total cost of syrup was $90. I know that's really expensive ferment but this has been on my mind ever since I tasted a friends maple wine. Her recipe also includes white grape juice but has a large dose of maple and it's amazingly good to drink. I'm hoping the maple will carry nicely into the spirit. In the overall scheme of things if it turns out really good it'll be far cheaper than buying at the store.

Just a little more expensive than water VB. If I'm happy with it I'll send along some samples to Canadians here for evaluation.

Will there be an issue with adding that much syrup to the boiler? Just wondering if it might burn.

Equipment type: Hybrid copper / stainless 35 litre pot still, with 2" reflux column option. Propylene glycol double boiler. 160 litre HDPE fermenters and mash tun.
All copper pot still "Rosie" in development.

I'm pretty certain there'll be in excess of 30 liters at 30%ABV for the spirit run plus the two liters of syrup. The syrup is minimum 62% sugar by law so I'm pretty sure it won't burn.
The ferment has a funky, harsh, almost fruity smell. Not at all like my usual rum ferments.

stripped out 22 liters @ 50%
added 25 liters of maple/molasses wash
4 liters of water
2 liters of maple syrup


collected at 95+ for the entire run 13.5 quarts

WoW, I really like this stuff.......great mouth feel and just enough sweetness to entice.........mixed with Diet 7up

Haven't had a drink of this since summer. I just poured one with diet pepsi and a slice of lime. F***king amazing flavor. WoW

I have a rum ferment on now with no maple in the ferment but I'm thinking I should put some in the spirit run to see if that's where most of this flavor comes from.
