Fermentation temp for single malt Scottish Whisky

Hi all you whisky gurus out there. Can anyone advise as to the best temperature for fermenting an all grain single malt whisky wash. any advice really appreciated.

Equipment type: 1500 x 54 coppper column packed with SPP, VM Proportional Splitting Head on 50 ltr keg. 4 plate 4" Bubble Cap on 50 ltr keg. 2" Standard Pot Still on 50 ltr keg.

Traditionally yeast is pitched into whatever degree wort will yield a peak temperature of no more than 91-93degF.

Thanks for the prompt response. 91f that's over 31c is that not too extreme a temperature. Don't know for sure. Thanks again

It's fine for scotch yeast like the M strain or the safspirit whisky line.

Your yeast will have a fermentation temperature range in the spec sheet, the closer to the top of the temp the faster it will ferment at the risk of more byproducts.
