Oooh! Me for that! Perhaps starting with a home-made lime marmalade cooked in gin? Breakfast of champions.

ZB it is getting warmer and I saw this, thought I'd better blow the dust off.

I looked at several recipes for making marmalade and this one is the best to me

Because:
1. All the others cut the oranges up and put them in the pot and it is a very thick jam like consistency.
He uses a BIAB for the pulp which gives a clear, MUCH prettier product. (I'm thinking Christmas presents)
2. Like a good author of a proven recipe, He also points out past "cockups" and things to watch out for.

I'm thinking maybe half the water to start, then add flat tonic with the gin.
I'm afraid it's going to take some experimenting to get the ratios right so it will gel and give the proper taste.
