Atomic Buffalo Turds (stuffed jalapenos)

I'm sure some of you guys here have done this, but I haven't seen a thread on it. I gave it a shot today and am quite happy with the results.

Atomic buffalo turds are jalapeno peppers stuffed with cheese and meat and wrapped in bacon. I used the following to make 20 of them.

10 peppers (cut in half lengthwise)
3/4 package cream cheese
1/2 cup shredded sharp cheddar
1/4 cup shredded mozza
3/4-1 cup fried cured pork sausage meat (not actual sausages)
chili powder to taste
small amount of cajun seasoning
1-2 tbs of your favorite dry rub
few dashes of ground chipolte

Mix and stuff the peppers "boats" then wrap with a slice of bacon.

I smoked these for an hour and then baked them (I don't have the cooking element hooked up in my smoker yet )

Yum! I thought they were called something like that. I had a few on 4th July and was told they were "Jalapeno poppers".

We cut the tops off, stuff and cook on the barbie vertically but - sniff - no bacon..

It's all spread out, there's a few posts in the what's for supper and a bit in one of VB's smoked pepper threads.

We love em round here, but they are a hassle to make if you don't have the right rack.

I nake them with regular bell peppers-- i dont like anything atomic-- My Italian taste buds are 70 years old and no more red pepper for this guy.
