Thanks mate, i'll have a google as well but won't be afraid to stick with Lens recipe.

I'll have a few spare kilo of 60/40 beef pork anyone else got any sausage recommendations? (i have a freezer full of pepperoni and kabanosi)

Corn syrup solids is dried corn syrup. Maybe, you could dextrose?

Have different ingredients than you guys. Make a ton with deer and aligator. Always use 50% pork. Can't go wrong with hog meat. Smoke some and eat the rest green. In a years time prob make next to 300 lbs. keeps well vacuum sealed. Made snack sticks once. Loved them. Will be doing more. Sausage is a handy grub.

Made all my spices up for tomorrow, 3 x 5lb batches. Texas Hot Links from the Texas BBQ book, Lens Slim Jims and a Black pepper Snack stick one i found on the web.

I'll have 10-12lb spare so will probably use some of the commercial Old English Pork meal i have here that's untried.

Kabanosi is the definate winner of the smoked sausages. The English Pork for the fresh i think. It's a commercial meal which means it's cheating, but it's easy and it's cheap. Great breakfast sausage.

Of the ones i did last time the Black Pepper snack sticks are the crowd favourites. They have some real heat, but go perfect with a beer.
