I'm not a wing snob, but I do have some *very* strong opinions on what makes an okay, good, and great wing.

Traditionalists advocate a Franks/Butter sauce after deep frying the wings, but I just really don't think that's the best way. The sauce emulsion is too 'brittle' (i.e. likes to separate and break the emulsion), deep frying doesn't add much flavor, and it's way too many calories for the flavor. Also, I deplore sugar of any kind in wings. It makes it even harder to get the right skin-to-meat consistency without burning or going to mush.

So, in my mind, the ideal wing is a crisp, slightly tacky skin. Even, uniform red color kinda like tandoori chicken but brighter. And meat that is as soft as pulled pork if it wasn't pulled. Also, a bit of a smokey note is awfully nice. To do this, I follow these steps:

* Brine the wings in a lightly salty brine for an hour or two
* Remove from brine, dry, and let air dry in the fridge for an hour or two (put them on a rack with a plate underneath)
* Fire up a lump charcoal grill, or a propane grill with some wood for flavor
* Cook the wings till the skin is just starting to pull back from the bone, 20 minutes or so depending on your heat
* Place the wings in a non-reactive bowl with enough Franks hot sauce to evenly cover everything, then add a teaspoon of soy sauce and a few drops of fish sauce (the kind you put in Pad Thai)
* Put the wings back on the grill in a cooler spot, and let them dry out for 15-20 minutes
* Try not to eat them all in one sitting

It's all about the crisp skin and soft, collagen-y meat. Truly effing delish :D

Thanks for bringing this post back up mate. I'm finally trying Decoys basting sauce :8)

More of a list of ingredients and a method than a recipe, but it was enough to follow. Just finnished the baste and sent Bourbon girl down to the local butchers for a few kilos of their permanent honey/soy wing special.

I'll bake em till nearly ready, then baste mine with decoys reduction.

Turned out pretty good, i used some honey, about a cup and a half of sweet chilli sauce, a cup or so of tomatoe sauce (ketchup), about a cup and a half of sugar, a tablespoon or so of rice wine vinegar, 8 LARGE cloves of mexican purple garlic, 4 teaspoons Habernero sauce, and a tablespoon of Char Sui sauce.

Reduced it down till it was sheeting off a spoon, and gelling as it cooled:8)

Man that sounds delish. Last year I was makin' wings on the grill almost every night, but this year I promised myself I'd get in a little better shape. :D

In my not-so-humble opinion the basic test of a good wing is the texture of the skin. Crisp and tacky, not dripping with sauce is what I aim for. Dripping with sauce is acceptable as long as the skin is crispy, but you only have a couple of minutes from them coming off the grill/out of the oven for that to happen, so I just prefer them a bit drier. But that is the wonderful thing about wings, there are at least as many ways to make them as there is BBQ.

Oh yeah, and if you cut your own wings, the tips make a *wonderful* chicken stock as long as you religiously de-fat it. So, so much collagen and connective tissue, it's delish.

(p.s. these are just my opinions, and like everyone knows opinions are like a-holes--everyone has one :D)

I simmer the tips while I'm cooking or marinating the wings, then I boil it down and use that in the sauce...

Been doing a search on Buffalo Wings on the net. It led me to Franks Hot sauce and then to the USA Foods website in Aus where the expats shop.

I ordered a half gallon of Lousianna Hot Sauce cause i can't go past a bargain...

I have not revisted this thread since. I ended up baking the wings, then broiling them at the end. Cooled them off for about half hour, and used Franks hot sauce, tabasco sauce, salt and butter. simmered the sauce for about 15 minutes till it seemed abit thicker then poured that over the wings.
Good for me. But now that I think about it, the skin wernt that crispy.

edit: i havent tried Decoys sauce method is what i'm saying. too grandour for this plain fella. but man that looks so good.

I'm doing some drumsticks in decoys sauce tonight. i keep some in the frezer.

But i want to try the Buffalo wing style too when the sauce gets here next week.

Well the buffalo wings were a hit last night. I'm eating leftovers now for breakfast.

I used this recipe, but jazzed up the flour with some hickory rub, corn flour and polenta.

That looks like a good recipe for wings....I'm going to try it instead of grilling my next batch.

As a side note, I've eaten Buffalo Wings at the Anchor Bar in Buffalo. They were good (fried not baked) but not the best I've tried. They just have a big reputation, I guess.

Sorry, yes i deep fried my wings in canola oil. Alchohol will probably kill me before cholesterol.

Cooking up a new batch of Decoy's sauce today. It's definately become a standard glaze round here. People love it. :rkn: :8)

This is how i finally interpreted Decoys method.

Chilli Wing Glaze****;

2,5 cups of white sugar
¼ cup honey
6 large cloves garlic
3 tsp habernero sauce
2tsp Chilli Oil
2 Tbsp Rice wine vinegar
1 tbsp grated fresh ginger
1 tbsp Char Sui sauce
¾ cup Fountain red tomato sauce
3 cups sweet chilli sauce
red food colouring (optional)
Boil glaze while stirring till it sheets off a spoon.
Use on meats in the oven like BBQ pork or chicken to glaze at high heat at the end of baking till coated and showing golden spots.

Cooked this for dinner last night that it was so good i cooked it again for a camping trip tomorrow. :roflmao:

I didn't measure anything last night, but sorta remembered pretty well how it went considering how many wheat beers i'd had. I had just a list of ingredients i found on the web while searching piri piri.
Now i have a recipe.

New batch of Decoys Chilli Glaze cooking atm. Got some strips of pork scotch marinading in Char Sui and sweet chilli, they'll go over the charcoal tomorrow or the next day on skewers and be glazed with the sweet chilli glaze. I'm salivating just typing this.
