Punkin, how are those chicken legs cooked? They look deep fried. Never seen chicken cooked on a skewer like that.

Baked in the oven mate. They aren't skewered the just slot into that rack and wings do too, albeit in a different way.

Okay, got it. In your pic it appeared that a rod was running through the leg tendon. Looks like it would do a nice even all around cook.

Inspired me and i cooked some last night. They aren't hot wings just a little nice spice to the mix.

Made wings for the first time tonight. I bought a small, 1 gallon deep fryer and a jug of Trappey's Red Devil Cayenne pepper sauce.

Per Pint's recommendation I reduced some of the sauce on the stove top and then added a little smoked jalapeño powder and not quite an equal amount of butter.

12 minutes in the fryer at 360F and the wings were not quite as crisp as we'd like. But they were done and not flabby. The sauce was good. Sorta hot for Mrs Mud but I liked it.

Tomorrow is game day and there are 4 dozen wings left to cook. Probably ought to get it right before the day is out.
Specialization is for Kiwi.

I like to smoke the wings with my basic rub, and then crisp them up on the IR cooker. I haven't deep fried any for quite a while.

I cook more thighs than wings any more.

I'd get the smoker out, but I'd have to shovel some snow off the deck. I can't wait until spring (and opening day. )
