We have six species in Australia.

Mostly around here are Red, Rusa and Fallow. We have wild pigs, rabbits, hares and goats as well that are hunted for food in the area. Aussies don't generally eat the wild pigs, but there are chillers operating round here in the winter that but the pigs and export to Europe and Asia where the markets are good for wild food.

Ok.. I've been on a bit of a jerky refinement quest of late (yay for fish sauce), and I'll admit that Punkin's "redacted super secret recipe" has me curious.. Assuming that you're now in the StillDragon business more than the Jerky business, any chance that you could un-redact? I don't really want to go combing the wayback machine if I don't have to. :)

Lol. Fortunately, as a resident of the great white north, I might just have access to said "secret ingredient". :) Thanks for the list. Looks tasty, and I think I have most of the ingredients kicking around already. :)

Finished a batch today, and its very good. Taste is much like that expensive sauce (but way cheaper) with a pepper kick. Thanks for sharing, punkin. I can certainly see how that would go over well. Damn kids just about spoiled their dinner..
