Just finished packaging my second go at the stuffer. The Cumberland sangs were so good, i've done a full batch of them.
20 kg of pork trim by myself yesterday through the mincer and stuffed into sheep casings netted 25kg of Pork Cumberlands. :8)

It was easy as using the stuffer by myself after i put a sah clamp on it to partially hold it steady. :wink:

Solo sausage fest here today. I'll be grinding, mixing and stuffing ten kilos of Kabanosi and smoking them tomorrow after an overnight bloom. :rkn: :8)

Wow, I've never had smoked oysters... I didn't even know that was a thing. I've never met a smoked fish I didn't like.

Made a 12 sheng block of Irish Pork and Parsley breakfast sausages yesterday. 23mm collagen casings. I have a few of them in the smoker today to see how they go with a little smoke, i'm hopeful they'll get a wurst or hotdog flavour and a sausage texture.

Kabanosi are one of my favorites. I made a batch and took them down to the Outer Banks last week. They got gobbled up fast. I'll be making a larger batch as soon as I pop into town and pick up more casings.

Yes i do a lot of Kabanosi. One that surprised me with how good it was last batch of sausages were a Slim Jim recipe i got from Ipoli. I substituted the fennel for caraway and cold smoked them for 6 hours before air drying them for a week or so. they are fucking fantastic and i'll be making them again very soon.
