did another batch of cheese
this batch used a slightly different culture and rennet, so cheese came out of the press a little harder.
split the batch between 4 smaller molds, 2 went in the smoker and 2 left plain.
I decided to try vacuum seal them so I didnt need to get the rind near as dry as needed for waxing, my hope is that means the smoke will migrate further into the cheese.
