Butt Glitter

Postby Rebel_Yell » Sat May 30, 2015 1:49 pm

This is what I use on my smoked butts as a dry rub before smoking... This recipe is made to scale. I give it in teaspoon units. You can use whatever suits as you unit of measure. Shengs even...

8 tsp paprika
3 tsp salt
3 tsp sugar
2 tsp cumin
2 tsp garlic powder
2 tsp celery seed
1 tsp chili powder
1 tsp oregano
1 tsp black pepper
1/2 tsp cayenne
1/2 tsp mustard powder

Anybody else have a good dry rub recipe?

Is that sweet or smoked paprika? Just ordered a kilo of the smoked from the butcher supply for chorizo but i don't use the regular one much.

Either will work. I use smoked Hungarian as it is what I have available. I often omit and add things in recipes if I can predict where the flavor will go in the end.

Equal parts salt, turmeric, and indian paprika. Cayenne (1/3 of a part?) to taste. I really like the turmeric on pork spare ribs.

The beauty of this type of seasoning is that one can add and subtract as they desire or have available. You get to eat your mistakes and those that are topper.

Ran it some some lamb grillers at lunch. A bit hot in the aftrburn for the Bourbon Girl i bet. So i did a BBQ Pit Boys Country style mix for dinner tonight on some more lamb chops.

The beauty is i can keep playing real cheap till i get it right and i can mix all the mistakes together in the end.

It's over $10-15 a LB for the good stuff here and i can make it for a tenth of that.

I've been using this for years. I posted it back on the "Dry Rub" thread some time ago. It's originally Mike Mills recipe and he won the Memphis In May BBQ contest with it several times. I used to go to his restaurant in Murphysboro, Illinois all the time.

I usually make double batches cause I give a lot away.

If its a little warm, cut back on the mustard powder.

Hhmmm, dry rub thread hey? I did have a feeling there was one of those here and went searching but stopped when i found this one. I', off to find more info.

I made the BBQ PIT Boys country stlye rub after that one and tried it for dinner that night but thought it was a little bland. So i've mixed the two 50/50 and will try that next time i have sausages or bacon or something.
